El Yunque Rainforest

During my vacation in Puerto Rico, my family and I took a small tour of El Yunque Rainforest, which is Puerto Rico’s national forest. The company we did the tour with, El Yunque Tours, is completely independent from the forest administration, but our guides knew a lot about the forest and its history. The rainforest is not far at all from where we were staying, but still we had to get up pretty early! It…

TBT: Vacationing in Crete

With a little less than one week to go before I hop on a plane to Puerto Rico, I’ve found myself going through old vacation albums. So I’m pretty sure you have all heard of the various ways you can use a cauliflower. Pinterest is chock-full of ideas on how to creatively prepare cauliflower while still keeping it healthy. The cauliflower pizza bottom for example is very popular. I have yet to try that out, but what I have been eating a lot lately is riced cauliflower. This started a few months back when I suddenly decided I wanted to eat more healthily. Cauliflower is my all time favorite food EVER and I knew I wanted to try out riced cauliflower, so I can have it…
